Our restaurants are places where you can enjoy and share our House. Whether in an intimate or festive atmosphere, the menus will take you on a culinary journey of a thousand flavours: your feet in the soil, your head in the stars…

Our Chef Hugo de la Barrière is committed to a locavore policy, honouring local products and know-how, which he considers to be an asset that we must protect and preserve. This approach can be found in all the restaurant areas at Brindos, Lac & Château*****.

The restaurant overlooking the lake, with its friendly atmosphere, offers total culinary immersion in the purest Basque tradition, combining tradition and innovation.

The Chef offers generous, unmissable dishes: Iberian ham, pata negra cut on a spit, terrines and pâtés en croûte… Fresh, seasonal cuisine for a culinary voyage of a thousand flavours. The products are selected in France and Spain.

As for desserts, the Head Pastry Chef sets the pace with a menu (and trolleys!) of original desserts, featuring revisited classics: chocolate and citrus cake, Basque beret, Basque cakes, seasonal fruit tart, millefeuilles, Paris Bayonne… All to share and cut up.

The star dessert: baba au rhum, served with a choice of fillings and spirits.

La chocolaterie

An approach supported by the region's history

Chocolate was introduced to France, in Bayonne, by Spain in 1615, for the wedding between Louis XIII and Anne of Austria. So it goes without saying that you have to eat chocolate in Brindos! Here, chocolate comes in all its forms and becomes a real spectacle as it is produced in front of our guests.
Our Chocolaterie also serves breakfast and brunch, with no set timetable and open all year round to both in-house and external customers. This gourmet meal is made with local, home-made products: brioches, cakes, granolas, shortbread, cookies, charcuterie, dairy products, home-smoked fish… And don’t forget the exceptional tea time created by our Head Pastry Chef on Saturdays and Sundays!

The association of Brindos with the Cazenave house

Founded in 1854, the Cazenave chocolate factory is a symbol of tradition and excellence handed down from generation to generation. Combining ancient know-how, artisanal production and selection of the finest cocoa beans, Cazenave’s artisan chocolatiers offer tasty and prestigious dishes. What’s more, it was the first chocolate factory in the Basque Country to obtain Organic Agriculture certification, a guarantee of quality and respect for the environment.
